Ingredients

  • 200 g Couscous
  • 1 red bell pepper
  • 1 bunch scallions
  • 0.5 bunch Parsley (10 g)
  • 6 tbsp olive oil (60 g)
  • 2 lemons (juice)
  • Salt
  • Pepper
  • Cumin
  • 1 Garlic clove
  • 1 Red Onion

Instructions

    Place couscous in a bowl, pour 200 ml boiling water over it, cover and let stand for 10 minutes, then fluff with a fork.

    Wash the bell pepper, dry it, halve it, remove seeds, and dice into small cubes. Wash parsley, shake off excess water, pluck leaves, and finely chop. Peel the onion and dice into small cubes.

    In a large bowl mix olive oil with lemon juice, salt, pepper, and cumin; peel and press in the garlic clove. Combine couscous, bell pepper, parsley, and onion cubes, then serve the salad in a bowl.
