Mozzarella with Avocado and Mango
Try the delicious mozzarella with avocado and mango from Spoonsparrow!
Ingredients
- 1 ripe Avocado
- 3 tbsp Lemon juice
- 125 g mozzarella (1 ball; 9% fat)
- 1 large ripe mango
- 40 g arugula (0.5 bunch)
- 30 g pine nuts (2 tbsp)
- 1 red chili pepper
- 3 tbsp orange juice
- 1 tsp liquid honey
- 1 tbsp Olive Oil
- Salt
- white pepper
Instructions

Halve the avocado, remove the pit, squeeze the flesh out of the skin, dice it small and mix with 2 tbsp lemon juice.

Drain the mozzarella well and dice it small. Peel the mango, separate the flesh from the seed, cut into 1 cm thick slices, then dice and mix with the remaining lemon juice.

Wash and dry the arugula. Toast the pine nuts in a pan without oil over medium heat until golden brown, remove and let cool. Wash, trim and slice the chili pepper into thin rings.

For the vinaigrette whisk orange juice with honey and olive oil, season with salt and pepper.

Place one serving ring on each plate, lay avocado cubes at the bottom, spread mozzarella cubes on top, finish with mango cubes.

Gently press everything together and carefully remove the rings. Garnish with arugula, drizzle with vinaigrette, and sprinkle with chili rings and pine nuts.
