Rosemary Cookies

Ingredients
- 300 g flour
- 1 tsp salt
- 1.5 tbsp freshly chopped rosemary
- 1 egg
- 200 g butter
- flour for work surface

Mix flour, salt and rosemary together; sift onto a floured work surface, create a well in the center, crack the egg into it and scatter butter pieces around the well. Quickly knead with hands into a smooth dough, shape into a ball and wrap in cling film. Refrigerate for 30 minutes.

Preheat oven to 180 °C (convection).

Roll out the dough on a floured surface to a thickness of about 0.4 cm and cut flower shapes (≈5 cm diameter) with an appropriate cutter. Place them on a baking sheet lined with parchment paper and bake in the preheated oven for 10–12 minutes. Remove, lift from the sheet with parchment and let cool.

Stack the cookies and serve garnished with a dollop of crème fraîche and rosemary sprigs.
