Pear Chocolate Soufflé

Ingredients
- 4 ripe pears
- 1 tsp lemon juice
- 100 g whole milk chocolate (or dark chocolate)
- 100 ml heavy cream (at least 30% fat)
- 2 Eggs
- 70 g sugar
- 60 g flour
- 1 tsp Baking powder
- butter (for the molds)
- powdered sugar (to dust)

Preheat the oven to 180°C (350°F). Wash, halve, core, and slice the pears into wedges. Drizzle with lemon juice. Melt the chocolate over a double boiler and let it cool slightly. Whip the cream until stiff peaks form and set aside.

Separate the eggs. Beat the egg whites to stiff peaks. In a bowl, whisk the yolks with sugar until pale and fluffy, then fold in the cooled melted chocolate. Add the whipped cream, sift in the flour, add baking powder, and gently fold everything together. Fold in the beaten egg whites.

Grease four large oven‑proof glasses, arrange the pear wedges inside, and pour the chocolate mixture over them. Bake in the preheated oven for 20–25 minutes until puffed and golden. Remove, dust with powdered sugar, and serve warm.
