Ingredients

  • 30 g Butter
  • 50 g Raisins
  • 350 g stale loaf wheat bread (or 2 stale rolls)
  • 1 vanilla pod
  • 450 ml Milk (3.5% fat)
  • 1 pinch salt
  • 3 tbsp raw cane sugar
  • 3 eggs
  • 2 tbsp apricot jam
  • 1 tbsp powdered sugar from raw cane sugar (for dusting)

Instructions

    Grease a baking dish with butter and sprinkle raisins inside. Cut the bread or rolls diagonally into slices and layer them in a casserole dish. Distribute remaining butter pieces on top.

    Split the vanilla pod lengthwise and scrape out the seeds with a knife. Combine vanilla seeds, pod, milk, and a pinch of salt in a pot; bring to a boil once. Remove from heat, let cool slightly, then discard the pod. Whisk eggs with sugar until frothy. Slowly pour the warm mixture over the bread while whisking, then pour over the loaf.

    Place the casserole dish on a deep baking tray, slide into the oven, and pour hot water around it. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 45 minutes until golden brown. Remove, spread apricot jam over top, and dust with powdered sugar. Serve warm.
