Ingredients

  • 800 g pre‑trimmed beef fillet (from the center section)
  • Sea salt
  • 0.5 tsp cumin seeds
  • 1 tsp peppercorns
  • 2 tbsp Vegetable oil

Instructions

    Preheat the oven to 140°C with fan and top heating.

    Rinse the fillet and pat dry. Grind 1 tsp salt with cumin and half the pepper in a mortar, then rub the mixture onto the meat. Brown all sides of the fillet in hot oil in a pan, then remove it from the pan. Place on a rack in the oven (with a fat‑trapping pan underneath) and cook for about 50 minutes depending on thickness and desired doneness (target internal temperature pink: 55–60°C).

    Remove from the oven and let rest on the rack for several minutes. Grind some more salt and the remaining pepper, sprinkle over the fillet, and serve sliced on a wooden board with a sharp knife.
