Ingredients

  • 1 eggplant
  • 1 onion
  • 2 Garlic cloves
  • 6 tbsp Olive oil
  • a few spritzes white wine vinegar
  • Salt
  • freshly ground pepper
  • 500 g wide sepia noodles

Instructions

    Wash and clean the eggplant, then dice it into small cubes.

    Peel the onion and garlic, then finely dice them as well.

  3. 3.

    Heat the olive oil in a large pan. Briefly sauté the diced eggplant, onion, and garlic. Season with vinegar, salt, and pepper.
