Rose Dessert with Berries

Ingredients
- 200 g Crème double
- 75 g sugar
- 1 tbsp rose water
- 200 g strawberries
- 200 g blackberries
- 1 Egg white
- fine crystal sugar
- aromatic, red organic rose petals (untreated)
- 150 g strawberries (for garnish)

Beat the crème double and sugar with a hand mixer.

Wash, clean, trim, and puree the berries. Strain the berry purée through a sieve and mix it with the crème double and rose water.

Pour the mixture into an ice cream maker and let it freeze for 10-20 minutes. Transfer the ice cream to a container and store in the freezer.

(Without an ice cream maker: pour the prepared mixture into a shallow metal bowl, place it in the freezer, and stir frequently at first to prevent large crystals from forming).

For the sugared rose petals lightly beat the egg white and brush both sides of the petals with it, dust with sugar, and let dry on parchment paper for about 3 hours.

To serve, scoop ice cream balls with a dispenser, place them in bowls, and garnish with finely chopped strawberries and candied rose petals.
