Ingredients

  • 500 ml heavy cream
  • 1 Vanilla bean
  • 75 g sugar
  • 5 egg yolks
  • 100 g cream cheese
  • 100 g chocolate shavings
  • 600 g strawberries
  • mint (for garnish)

    Pour 400 ml of cream with the split vanilla bean and sugar into a pot and bring to a boil. Remove from heat. In a bowl, whisk the egg yolks and gradually pour in the hot cream while stirring. Return to the pot and stir until it thickens and rises. Transfer back to the bowl and let cool, occasionally stirring and removing the vanilla bean. Whip the remaining cream stiffly. Stir the cream cheese into the cooled mixture, fold in the whipped cream and chocolate shavings. Chill for about an hour.

    Wash, trim, and cut strawberries according to size. Alternate layering the cream and strawberries in glasses and serve garnished with mint.
