Shrimps-Cocktail with Avocado and Chili

Ingredients
- 1 untreated lemon
- 1 red chili pepper
- 1 Garlic clove
- 600 g scampi (pre-cooked, peeled and deveined)
- 1 Avocado
- Salt
- pepper (ground)
- 2 tbsp olive oil
- chives sprigs (for garnish)

Wash the lemon hot, dry rub it and peel the zest with a zester. Cut the lemon in half and squeeze out the juice. Wash the chili, cut it lengthwise, deseed and finely chop. Peel the garlic and also finely chop.

Mix the shrimp with 1 tbsp lemon juice, garlic and chili and marinate for 1 hour. Peel the avocado, halve it, remove the pit, cut the flesh into pieces and immediately mix with the remaining lemon juice.

Pat the shrimp dry, season with pepper, brown in hot olive oil, remove and mix under the avocado pieces. Season with salt. Arrange in bowls and garnish with chives tips and zest before serving.
