Roasted Spit Pork Leg

Ingredients

  • 2 cloves garlic
  • 20 ml brandy
  • 150 ml dry white wine
  • 1.5 kg spit pork leg (with rind)
  • 2 tbsp pork lard
  • Salt
  • pepper (ground)
  • 1 head of garlic

Instructions

    Preheat the oven to 180°C (350°F) with upper and lower heat.

    Peel and finely chop the cloves of garlic, then mix with brandy and wine.

    Wash the meat, pat dry, score the rind in a diamond pattern, rub with lard, salt, pepper, and sear all sides in a roasting pan. Remove from pan.

    Shake off pine or fir needles, dry, add to the pan, place the pork on top, add the head of garlic, and roast in the preheated oven for about 1.5 hours, basting with the mixture several times. During the last 10 minutes, apply high heat or grill to crisp the rind.

    Serve with, for example, roasted potatoes.
