Ingredients
- 1 small lamb leg (1.5 kg)
- Salt
- Pepper (freshly ground)
- 2 tbsp olive oil
- 250 ml dry red wine
- 500 g medium-sized, waxy potatoes
- 125 g shallots
- 3 Garlic cloves
- 3 sprigs fresh rosemary

Trim the fat from the meat to a thin layer and rub with salt and pepper.

Heat the oil in an appropriate roasting pan, sear the leg all over. Deglaze with wine, bring to a boil and roast uncovered in a preheated oven for 1 hour, basting occasionally with the pan juices.

Peel, wash, and quarter the potatoes. Peel and halve the shallots. Peel and roughly chop the garlic; rinse and dry the rosemary sprigs.

After 1 hour of cooking, distribute the potatoes, shallots, garlic, and rosemary around the lamb leg, sprinkle with salt and pepper, then return to the oven for an additional 45 minutes until done.
