Roasted Spiced Cauliflower

Roasted spiced cauliflower from Spoonsparrow doesn't have to hide behind any meat dishes.

Ingredients

  • 1 kg Cauliflower
  • 250 g Cherry Tomatoes
  • 4 shallots
  • 4 Garlic cloves
  • 3 fresh bay leaves
  • 0.5 tsp Black cumin
  • 0.5 tsp Coriander seeds
  • 1 tsp turmeric powder
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • 10 g parsley (0.5 bunch)

Instructions

    Clean, wash and cut the cauliflower into small florets. Wash, clean and halve the tomatoes. Peel and halve the shallots and garlic. Place the prepared ingredients with the bay leaves in a roasting tin.

    Crush the cumin and coriander in a mortar. Mix with turmeric, lemon juice and oil. Season with salt and pepper. Mix the spice oil with the cauliflower and distribute everything evenly in the tin. Roast in a preheated oven at 180 °C (160 °C fan; Gas: Mark 2-3) for about 40 minutes until golden brown, stirring halfway through.

    Remove from the oven. Wash, shake dry and chop the parsley leaves. Serve the cauliflower sprinkled with parsley.
