Zucchini Fritters
The popular zucchini fritters from Spoonsparrow are not to be missed!
Ingredients
- 1 onion
- 1 Garlic clove
- 3 tbsp olive oil
- 800 g Zucchini
- Salt
- 3 eggs
- 8 tbsp Whole wheat spelt flour
- Pepper
- 2 tbsp Whole wheat breadcrumbs

Peel and finely chop the onion and garlic. Heat 1 tbsp of oil in a pan and sauté both until translucent over medium heat. Remove from heat and let cool.

Wash, clean, and shred the zucchini. Place it in a sieve, mix with salt, and let it sit for about 15-20 minutes. Then press it firmly to remove excess moisture and mix with the onion mixture.

Whisk the eggs with the flour and mix with the zucchini shreds. Season with pepper and add enough breadcrumbs to make the mixture loose but not runny. Heat the remaining oil in a pan and place small mounds of batter into it. Press them slightly flat and fry until golden brown on both sides. Keep the finished zucchini fritters warm in a preheated oven at 80 °C (Fan 60 °C; Gas: lowest setting).
