Baked Cauliflower Nachos from Spoonsparrow: This tastes great for the whole family at dinner!

Ingredients

  • 1 Cauliflower
  • 1 tsp Sweet paprika powder
  • 0.5 tsp Garlic powder (or 1 finely chopped clove of garlic)
  • Salt
  • Pepper
  • 2 tbsp olive oil
  • 1 Green Chili Pepper
  • 1 red bell pepper
  • 1 Red Onion
  • 100 g cherry tomatoes
  • 80 g Black beans (canned; drained weight)
  • 100 g Cheddar cheese
  • 0.5 bunch Parsley
  • 1 Lime

Instructions

    Clean the cauliflower, remove the stalk, cut into florets and wash. Roughly chop the florets into slices. Mix with paprika powder, garlic powder, salt, pepper and olive oil in a bowl. Place the marinated cauliflower slices on a baking sheet lined with parchment paper and bake in a preheated oven at 200 °C (Fan: 180 °C; Gas: Mark 3) for 20 minutes.

    Meanwhile, clean, wash and slice the chili pepper and bell pepper into rings or pieces. Peel, halve and slice the onion lengthwise. Wash and halve the tomatoes. Drain the beans, rinse and drain well. Grate the cheddar cheese.

    Remove the cauliflower. Distribute the chili pepper, bell pepper, onion, tomatoes, beans and cheddar on the cauliflower, salt and pepper. Bake in the oven for another 5–7 minutes.

    Wash, dry and chop the parsley. Wash the lime, dry it, and cut it into wedges. Remove the cauliflower nachos from the oven, sprinkle with parsley and serve with lime wedges for squeezing.
