Ingredients
- 7 oz roasted, drained bell peppers (canned)
- 3 tomatoes (e.g., canned tomatoes)
- 1 tbsp Olive Oil
- Salt
- Pepper
- 5.8 oz sheep cheese (9% fat absolute)
- 1 small lemon
- 1 tbsp honey
- 2 tsp fennel seeds
- 2 tbsp breadcrumbs
Instructions

Drain the bell peppers and cut them into strips.

Peel, wash, halve, and slice the tomatoes.

Lightly grease 2 small baking dishes with oil. Arrange the peppers and tomatoes in them. Salt and pepper.

Cut the sheep cheese into slices or break it into pieces and place it on top of the peppers and tomatoes.

Squeeze the lemon juice. In a small bowl, mix honey, remaining olive oil, lemon juice, and fennel seeds. Pour over the cheese and season generously with pepper.

Sprinkle with breadcrumbs. Place the baking dishes in the preheated oven and bake the sheep cheese at 400°F (190°C, Gas: Mark 3) for about 10 minutes until golden brown.
