Ingredients

  • 2 large red mullet
  • Salt
  • freshly ground pepper
  • 4 bay leaves
  • 4 tbsp white wine
  • 2 Garlic cloves
  • 2 tbsp mixed herbs
  • 1 tbsp honey
  • 4 tbsp extra virgin olive oil
  • 2 bunchs spring onions

Instructions

    Wash the red mullet thoroughly and pat dry. Season the fish inside and out with salt and pepper. Place one bay leaf and a splash of wine into each cavity.

    Peel the garlic, slice finely, and mix with herbs, honey, and 3 tbsp olive oil. Season with salt and pepper.

    Trim and wash the spring onions. Brush the oven pan with oil. Arrange the spring onions on the pan and place the mullet on top.

    Brush the fish with the honey-herb mixture and bake in a preheated oven (electric stove: 200°C, gas stove: level 3) for 30 minutes. Serve with a Mediterranean salad and baguette.
