Fruity Sea Bream with Fennel

Ingredients

  • 1 sea bream about 1.2 kg (ready to cook)
  • 2 bulbs of fennel
  • 2 oranges
  • Sea salt
  • black pepper (freshly ground)
  • olive oil
  • a small handful of thyme sprigs

Instructions

    Rinse the sea bream and pat it dry. On one fillet side, make 3-4 shallow cuts about 1 cm deep. Wash, trim, remove the core from the fennel and slice into strips. Peel the oranges thoroughly and cut into slices. Insert a slice into each cut of the fish.

    Preheat the oven to 180°C (356°F) with both fan and top heating.

    Drizzle an oven tray with olive oil and spread the fennel and remaining orange slices on it. Drizzle again with olive oil and season with salt and pepper. Salt and pepper the inside and outside of the fish, then place it on the fennel-orange bed. Drizzle a little more olive oil over the fish. Place some thyme sprigs inside the fish and scatter the rest on top. Bake in the oven for 35-45 minutes.
