Ingredients
- 8 matjes fillets (marinated in oil)
- 100 g mayonnaise
- 100 g Sour cream
- 1 pinch piment powder
- 2 tbsp pickling liquid
- Salt
- ground pepper
- 1 pinch sugar
- 2 onions
- 2 pickled cucumbers
- 1 tart apple
- 1 tsp freshly chopped dill
- 200 ml heavy cream (at least 30% fat)
- 1 hard‑boiled egg

Wash the fillets, pat dry and cut into bite‑sized pieces. Whisk mayonnaise with sour cream. Add piment and pickling liquid, seasoning with salt, pepper, and sugar.

Peel and finely dice the onions. Dice the pickled cucumber. Wash the apple, quarter it, remove seeds, and dice finely. Combine the sour cream mixture with onions, cucumber, dill, and apple.
