Roasted Quinoa
Roasted Quinoa with Curry and Almonds: This vegetarian quinoa side dish is more protein-rich than grains and gluten-free.
Ingredients
- 75 g Quinoa
- 40 g chopped almonds (4 tbsp)
- Salt
- 2.5 tbsp olive oil
- 2 tbsp mild curry powder
- Pepper

Rinse the quinoa in a sieve until the water runs clear, drain well. Bring 225 ml of water to a boil, add the quinoa and cook covered over low heat for about 12 minutes. Then remove from heat and let stand for 10 minutes.

Meanwhile, roast the chopped almonds in a non-stick pan without fat until golden brown, remove and let cool on a plate. Lightly salt the quinoa and drizzle with 1/2 tbsp of olive oil.

Heat the remaining oil in the pan and roast the quinoa in it over medium heat, stirring, for 8-9 minutes until crispy and golden brown.

Add curry powder and almonds. Stir for another minute. Season with salt and pepper and serve immediately.
