Ingredients
- 800 g medium-sized, waxy potatoes
- Salt
- 2 tbsp olive oil
- 4 sprigs thyme
- 4 stalks chives

Wash the potatoes and make fan-shaped cuts. Place them on a baking sheet lined with parchment paper and salt them. Brush with oil. Bake in a preheated oven at 180 °C (160 °C convection; Gas: Mark 2-3) for about 40 minutes until golden brown.

Wash, dry, and roughly chop the thyme and chives. Sprinkle the herbs over the Hasselback potatoes in the last 5 minutes, finish baking and serve immediately.
