Ingredients

  • 1 kg potatoes (starchy)
  • 50 g Lardo di Colonnata (sliced)
  • 3 rosemary sprigs
  • 4 Garlic cloves
  • 1 tsp fennel seeds
  • 3 tbsp olive oil
  • Salt
  • pepper (ground)

Instructions

    Peel the potatoes and cut them lengthwise into wedges.

    Slice the bacon into strips.

    Remove rosemary leaves and roughly chop.

    Press the garlic cloves.

    Combine all ingredients, season with salt and pepper, and transfer to a heatproof dish. Roast in a preheated oven at 180°C for about 40 minutes until golden brown, turning several times during cooking.
