Ingredients

  • 1 chicken (ca. 1,2 kg)
  • 800 g waxy potatoes
  • 200 ml poultry broth
  • salt
  • Pepper (freshly ground)
  • 2 untreated lemons
  • 2 EL honey
  • 40 ml lemon liqueur
  • 2 red bell peppers
  • 2 sprigs Rosemary

    Preheat the oven to 180°C with fan and top heat.

    Wash, pat dry and quarter the chicken. Place in a baking dish. Peel the potatoes and cut them into halves or quarters depending on size. Arrange around the chicken and pour a little broth over them. Season with salt and pepper. Slice one lemon thinly; squeeze juice from the second lemon and mix with honey and liqueur. Brush the chicken with this mixture and bake for about 20 minutes. Occasionally brush again and add more broth if needed. Turn the potatoes occasionally. Wash, halve, deseed, and slice the bell peppers into strips. Distribute the pepper strips and rosemary sprigs over the potatoes and chicken and bake another 20-25 minutes until cooked through. Taste and serve.
