Baked Soy Chicken Thighs

- 12 chicken thighs
- 1 tbsp honey
- 1 tbsp Rice vinegar
- 3 tbsp Sesame oil
- 2 tbsp Light soy sauce
- Salt
- black pepper (freshly ground)
- 1 stalk leeks
- chives (for binding)
- 2 tbsp lemon juice

Preheat the oven to 180°C (356°F) with fan and top heat. Wash and pat dry the chicken thighs. Whisk honey, vinegar, oil, and soy sauce together; season with salt and pepper. Place the thighs in a roasting pan, brush with the seasoning mixture, and bake for about 30 minutes until golden brown, turning occasionally and basting with more glaze. While baking, clean and slice leeks diagonally into thin rounds. Steam them in a steamer basket covered over simmering water for 5-6 minutes until firm.

Serve the chicken thighs as desired, optionally binding with briefly blanched chive stems, filling small bowls with the leeks, and drizzling lemon juice on top.
