Ingredients

  • 1 chicken (ca. 1 kg)
  • Salt
  • Pepper (freshly ground)
  • paprika powder
  • 0.5 tsp Curry Powder
  • 0.5 tsp cumin
  • 4 tbsp olive oil
  • 1 untreated orange
  • 1 bay leaf
  • 2 rosemary sprigs
  • 750 g firm boiling potatoes
  • 250 ml vegetable or poultry broth

Instructions

    Preheat oven to 220 °C. Wash chicken, pat dry and cut into 8 pieces, removing breastbone and spine. Season chicken pieces with salt, pepper, curry and cumin. Rinse orange hot, dry peel, halve and slice or chop with peel. Brush a deep baking tray with half the oil, arrange chicken pieces on it and bake for 20 minutes in preheated oven.

    Wash rosemary, shake dry and break into several pieces. Peel, wash potatoes, slice, pat dry, salt and pepper. Turn chicken pieces and add potatoes and rosemary to the baking tray. Bake everything together for another 20 minutes, turning occasionally. Pour broth over and bake for an additional 10 minutes. Serve with white bread.
