Ingredients

  • 600 g chicken breast fillet (ready to cook, skinless)
  • 120 g coconut flakes
  • 1.5 tsp curry powder
  • 1 tbsp freshly chopped coriander
  • 1 untreated lemon (juice)
  • Salt
  • pepper (ground)
  • 30 g butter (crumbled)

Instructions

    Preheat the oven to 220°C with upper and lower heat.

    Wash the meat, pat dry, cut into bite‑sized rough cubes. Roast the coconut flakes in a hot pan without fat until golden yellow, remove and set aside. Mix with curry powder and coriander. Drizzle the chicken with some lemon juice, lightly salt, pepper, and coat with the coconut mixture. Divide the chicken cubes into 4 portions and place each on a cut piece of parchment paper. Cover with butter crumbs, seal the parchment, and put on a baking tray. Bake in the preheated oven for 10‑15 minutes. Remove and serve with spiced rice if desired.
