Ingredients

  • 1 chicken (pre‑cooked, about 1.4 kg)
  • 3 cloves of garlic
  • Salt
  • pepper (ground)
  • 2 tbsp olive oil
  • 100 ml dry white wine
  • 2 Bay leaves
  • 1 bunch parsley
  • 2 sage leaves
  • 1 stalk lemon balm
  • 1 untreated lemon (zest)

    Preheat the oven to 180°C with upper and lower heat. Wash, dry, pat the chicken dry and cut into eight portions. Remove only the hard outer skins from the garlic cloves and halve them crosswise.

    Season the chicken pieces with salt and pepper, place skin‑side down in a roasting pan. Drizzle with oil and pour in one small cup of water plus the wine. Add the garlic halves and bay leaves, then roast in the hot oven for about 20 minutes.

    Wash the herbs, shake dry, chop the leaves. After 20 minutes flip the chicken pieces, spoon over the sauce, add the herbs and lemon zest, and continue cooking for another 25–30 minutes until done.
