Ingredients

  • 2 carrots
  • 1 small onion
  • 1 Garlic clove
  • 1 yellow bell pepper
  • 1 flesh tomato
  • 1 small yellow zucchini
  • 4 stems basil
  • 4 tbsp olive oil
  • Sea salt
  • Pepper
  • 8 white bread slices

Instructions

    Peel the carrots and dice them into small cubes. Peel and finely dice the onion. Peel and mince the garlic clove. Wash, halve, seed, and cube the bell pepper. Blanch the tomato, peel, halve, seed, and cube it. Wash and slice the basil leaves into strips. Heat the olive oil in a pan and add all ingredients except the basil; sauté over low heat for 3-5 minutes. Season with salt and pepper, then drain any excess liquid.

    Grill, bake, or toast the white bread slices until golden yellow. Mix the basil into the vegetables and spread the mixture onto the bread. Arrange on plates and serve.
