Ingredients
- 1.2 kg purple carrots (or ancient carrots)
- 2 tbsp olive oil
- 2 tbsp sesame oil
- Salt
- 1 Garlic clove
- 1 tbsp Lemon Juice
- 1 tbsp Maple Syrup
- fresh thyme for garnish
Instructions

Preheat the oven to 200°C with top and bottom heat. Peel and halve the carrots lengthwise. Toss them with both oils and a pinch of salt, then spread on a baking sheet. Roast in the oven for about 45 minutes until tender, turning occasionally.

Peel the garlic and squeeze it into lemon juice. Stir in maple syrup and fold this mixture into the carrots during the last 15 minutes of roasting.

Serve garnished with fresh thyme.
