Ingredients

  • 12 elderflower blossoms
  • 1 egg
  • 175 ml dry white wine
  • 125 g flour
  • 1 tbsp sugar
  • 1 tsp vanilla sugar
  • 2 tbsp liquid butter
  • 1 pinch salt
  • vegetable oil (for frying)
  • powdered sugar (for dusting)

Instructions

    Do not wash the blossoms, just shake and trim them.

    Separate the egg. Beat the yolk with wine, flour, sugar, and vanilla sugar into a smooth batter. Fold in butter and let rest for about 20 minutes.

    Beat the egg white with salt until stiff peaks form, then fold into the batter. Gently press the blossoms through the mixture and fry portions in hot oil for about 2 minutes each. Drain on paper towels and serve dusted with powdered sugar.
