Ingredients

  • 1 kg roastbeef
  • 2 EL plant oil
  • 1 EL sharp mustard
  • 1 TL coriander seeds
  • 1 TL peppercorns
  • 1 TL dried thyme
  • Salt
  • 250 ml meat broth
  • 2 EL crème fraîche
  • 3 EL grainy mustard
  • pepper (ground)

Instructions

    Preheat the oven to 140°C with fan and top heat.

    Rinse the roastbeef, pat dry, brown all sides in hot oil, then remove. Brush all over with mustard. Crush coriander and peppercorns together, mix with thyme and about 1 TL salt, and rub onto the meat.

    Place on a rack (under a fat pan) in the oven; cook for 40‑50 minutes depending on thickness and desired doneness (pink center: ~55°C).

    Deglaze the pan juices with broth, reduce slightly. Remove from heat, stir in crème fraîche and mustard, season with salt and pepper.

    Remove meat from oven, let rest wrapped in foil briefly, then slice and serve with sauce.
