Ingredients

  • 1 lamb shank (ca. 800 g)
  • 2 Garlic cloves
  • 400 g waxy potatoes
  • 150 g green beans
  • 2 red onions
  • 2 sprigs Rosemary
  • Sea salt
  • 2 tbsp lemon juice
  • black pepper
  • 2 tbsp olive oil

Instructions

    Preheat the oven to 160°C fan.

    Rinse the meat and pat dry. Peel and slice the garlic cloves. Peel and cut the potatoes into pieces. Wash and trim the beans. Peel, halve, and slice the onions.

    Place the prepared vegetables on a large piece of aluminum foil. Lay rosemary over them and season with salt, some lemon juice, and pepper. Rub the lamb shank with the remaining lemon juice, salt, and pepper. Place it on top of the vegetables and drizzle with oil. Wrap everything tightly in the foil and seal well. Put it on the rack in the oven.

    Bake for about 3 hours. Open before serving and arrange on a plate.
