Lamb Steaks with Salad and Oven Potatoes

Ingredients
- 800 g waxy potatoes
- 2 untreated lemons
- 3 tbsp olive oil
- Sea salt
- Pepper (freshly ground)
- 4 lamb steaks (about 200 g each)
- 1 handful parsley
- 1 Garlic clove
- 120 ml dry white wine
- 1 bay leaf
- 0.5 cucumber
- Salt
- 250 g Greek yogurt
- 2 Garlic cloves
- 1 tbsp Olive Oil
- Pepper (freshly ground)
- 1 tbsp freshly chopped dill
- 1 cucumber
- 200 g Cherry tomatoes
- 1 Red Onion
- 3 tbsp white balsamic vinegar
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)

Preheat the oven to 180°C fan.

Wash, brush and cut the potatoes in half or quarters depending on size. Wash lemons hot, dry them, slice one lemon into rounds. Place potatoes in a baking dish, drizzle with 2 tbsp oil, season with salt and pepper, mix well and bake for about 35 minutes until golden brown, turning occasionally.

For the tzatziki peel the cucumber, cut it lengthwise, remove seeds and grate the halves roughly. Mix with a little salt and let sit for about 15 minutes to draw out water. Squeeze lightly and add to yogurt in a bowl. Grate the garlic finely into the mixture. Season with salt and pepper and stir in olive oil. Cover and refrigerate for at least 15 minutes before serving; fold in dill and adjust seasoning.

Pat the steaks dry, season with salt and pepper and sear them in a hot pan with 1 tbsp oil on both sides until golden brown. Grate zest from the second lemon. Rinse parsley, shake dry, pluck leaves and chop. Peel garlic and finely chop as well. Combine lemon zest and parsley and sprinkle over the meat. Pour wine, add bay leaf, cover and cook gently for about 10 minutes until pink.

For the salad wash cucumber, cut lengthwise, remove seeds and dice halves. Wash tomatoes, trim and halve them. Peel onion and slice into strips. Whisk vinegar with oil, season with salt and pepper. Toss tomatoes, cucumber and onion together.

Plate steaks with pan juices, salad and tzatziki, and serve alongside the lemon potatoes.
