Roastbeef with Asparagus

- 800 g roastbeef
- 3 tbsp sunflower oil
- 2 bunches green asparagus
- 3 tbsp butter
- 4 tbsp vegetable broth
- 2 tbsp fresh thyme leaves
- Salt
- pepper (ground)
- nutmeg (grated)
- 4 tomatoes

Season the roastbeef with salt, pepper and nutmeg to taste and brown it on all sides in oil. Roast in a preheated oven at 140°C (medium rack, top and bottom heat) for about 30 minutes until pink inside.

Wash the tomatoes and slice them. Melt one tablespoon of butter that is not too hot, season with salt and pepper, then add the tomato slices to melt briefly.

Peel the asparagus and trim the woody ends. Bring a large pot of salted water to a boil. Cook the asparagus for 8-12 minutes depending on thickness until tender yet still firm. Drain and reserve the cooking liquid.

After resting the finished roastbeef for 5 minutes, slice it thinly and arrange with the asparagus and tomatoes. Finely chop the thyme leaves and sprinkle over the dish. Pour the reserved asparagus broth over the plate and serve.
