Ingredients

  • 4 pieces salmon fillet (about 200 g)
  • 1 tbsp Lemon Juice
  • 1 broccoli head
  • 4 Carrots
  • 0.5 bunch Parsley
  • 1 tsp orange zest
  • Salt
  • Pepper
  • 1 tbsp oil

Instructions

    Wash the parsley, shake dry, pluck leaves from stems and finely chop. Mix parsley with lemon juice, orange zest, salt, and pepper, then coat the fish pieces with this mixture.

    Meanwhile wash the broccoli, cut into florets, and blanch in boiling salted water for about 5 minutes. Peel the carrots, cut into sticks, and blanch for 2 minutes. Drain the vegetables, shock them in ice water, and let drain.

    Spread the vegetables on parchment paper brushed with oil, lightly pepper, and place one salmon fillet on each. Cover with a second sheet of parchment, roll around the edges, and press firmly.

    Place on an oven rack and bake in a preheated oven at 160°C for about 15-20 minutes.

    Remove from the oven to serve and tear open the parchment on top.
