Ingredients

  • 400 g linguine
  • 1 bundle arugula
  • 1 sprig parsley
  • 1 sprig basil
  • 1 sprig sage
  • 0.25 bundle chives
  • 2 chili peppers
  • 4 Garlic cloves
  • 4 tbsp olive oil
  • 80 g Parmesan (freshly grated)
  • Sea salt
  • ground pepper

Instructions

    Peel the garlic, chop it and rub with a little sea salt. Cook the pasta according to package instructions in plenty of salted water until al dente. Wash and dry the herbs and arugula; shake off excess moisture. Tear the arugula into thirds or quarters. Chop the herbs. Wash the chili peppers and slice them into thin rings (those who prefer less heat should remove the white seeds and membrane).

    Heat the oil in a pan, sauté the chilies with the garlic. Drain the pasta, let it dry slightly, then add it to the pan. Reduce the heat and just before serving fold in the herbs and arugula, season with salt and pepper. Plate the pasta and sprinkle with parmesan.
