Ingredients
- 200 g basmati rice
- 1 white onion
- 1 tbsp butter (or ghee)
- 1 cinnamon stick
- 2 cloves
- 4 cardamom pods
- 400 ml Vegetable broth
- 1 tsp saffron (ground or strands)
- Salt
- Pepper (freshly ground)

Wash the rice in a bowl with plenty of water, drain it in a sieve and let it drip dry.

Peel and finely dice the onion. Melt the butter in a pot. Sauté the cinnamon stick, cloves, and cardamom over low heat. Add the onions and sauté until translucent. Add the rice and stir to coat. Pour in the broth and bring to a boil briefly. Cover and simmer on very gentle heat for 20 minutes, adding more broth if needed.

Meanwhile, steep the saffron in a small bowl with warm water for about 10 minutes. Stir into the rice just before it finishes cooking.

Season with salt and pepper and serve.
