Ingredients
- 4 rice paper sheets
- 1 small head of lettuce
- 2 carrots
- 4 dried Mu-Err mushrooms
- 1 bell pepper
- 1 bunch chives (if available blooming)
- 1 tbsp White Wine Vinegar
- soy sprouts
- 3 tbsp salad oil
- Salt
- pepper (ground)

Soak rice paper between damp kitchen towels.

Peel carrots and cut into thin, wide strips.

Wash lettuce, dry thoroughly. Soak mushrooms in lukewarm water for 10-20 minutes, then drain, pat dry, and chop finely. Clean bell pepper, halve, seed, and slice into fine strips. Mix vinegar, oil, salt, and pepper.

On each rice paper sheet place 1-2 lettuce leaves, add some carrot strips, Mu-Err mushrooms, and bell pepper strips, drizzle with the dressing, then carefully roll into packets by closing the ends, cutting diagonally through the middle. Arrange standing on plates, optionally insert sprouts and chives in small bundles.
