Rice Paper Rolls

Ingredients
- 8 rice paper
- 8 young carrots (with greens)
- 1 tbsp butter
- Salt
- 1 bunch spring onions
- 1 red chili pepper
Instructions

Soak the rice paper sheets between two damp kitchen towels.

Wash and brush the carrots, leaving a bit of green on them.

Trim the spring onions, wash and cut into ~12 cm pieces, then slice those pieces lengthwise into thin strips.

Wash the chili pepper, deseed and cut crosswise into fine strips.

Blanch the carrots in boiling salted water for about 7 minutes, then drain.

Sauté the chili strips in hot butter, add the carrots to the butter and season with salt.

Place two rice paper sheets on top of each other, put carrots with chili strips and spring onion strips in the middle, roll everything up tightly. Seal the edges with a little water.
