Ingredients

  • 125 g celery sticks
  • 1 Zucchini
  • 2 Bell peppers
  • Salt
  • Pepper (freshly ground)
  • 0.5 bunch spring onions
  • 1 tbsp Olive Oil
  • 125 ml passata tomato puree
  • 1 sprig rosemary

Instructions

    Wash, trim and slice the celery into thin strips.

    Wash, trim and dice the zucchini.

  3. 3.

    Wash, trim, halve, seed and cube the bell peppers. Place all vegetables in a bowl and season with salt and pepper.

    Wash, trim and finely slice the spring onions. Heat olive oil in a pan over medium heat, add the onions and sauté until translucent. Add the tomato puree and simmer gently for a few minutes.

    Add the tomato mixture to the vegetables and let the flavors meld for about 1 hour. Garnish with rosemary before serving.

    Serve with crusty bread.
