Ingredients

  • 150 g arugula
  • 300 g roasted beet (vacuum packed)
  • 1 tart apple
  • 4 tbsp apple cider vinegar
  • 4 tbsp olive oil
  • 1 tsp Honey
  • Salt
  • black pepper (freshly ground)
  • 80 g freshly grated goat cheese

Instructions

    Wash, trim, and dry the arugula. Slice the roasted beet into thin rounds. Peel the apple, quarter it, remove the core, and dice the quarters.

    Whisk together the vinegar, oil, and honey. Season with salt and pepper, then fold in the apple pieces.

    Arrange the beet, arugula, and goat cheese on plates decoratively and drizzle with the dressing before serving.
