Rice Noodles with Shrimp
The rice noodles with shrimp from Spoonsparrow are quick to make and ready on the plate in no time!
Ingredients
- 400 g wide rice noodles
- Salt
- 500 g shrimp (peeled and deveined)
- 2 Garlic cloves
- 50 g peanuts
- 1 red chili pepper
- 4 stalks coriander
- lime
- 1 tbsp peanut oil
- 10 g brown sugar (1 tsp)
- 4 tbsp sweet-spicy chili sauce
Instructions

Cook the rice noodles in salted water according to the package instructions.

Meanwhile, rinse the shrimp under cold water and drain. Peel and finely chop the garlic. Roughly chop the peanuts. Wash, deseed, and finely chop the chili pepper. Wash the coriander, shake dry, and chop. Squeeze one lime; wash the other lime hot and cut into 4 wedges.

Heat oil in a wok. Fry the shrimp over high heat for about 2 minutes until crisp.

Add garlic, peanuts, chili, and sugar to the shrimp and stir-fry for 1 minute.

Drain the noodles, let them dry well, then add to the shrimp. Mix well and stir-fry together for about 1 minute.

Add coriander, chili sauce, and lime juice to the wok with noodles and shrimp; season with salt. Divide all ingredients onto four plates and garnish with lime wedges.
