Spoonsparrow Rhubarb Lemonade: Sparkling Refreshment for Spring

Ingredients

  • 400 g rhubarb
  • 2 limes
  • 75 g raw cane sugar

Instructions

    Wash, trim and cut the rhubarb into small pieces. Halve the limes and squeeze out the juice.

    Add the rhubarb, lime juice, sugar and 600 ml water to a pot and bring to a boil.

    Simmer the rhubarb over medium heat for about 15 minutes, then remove from the stove and puree with an immersion blender until smooth. Strain the puree through a cloth, squeeze out the liquid and collect the juice.

    Pour the rhubarb lemonade into a pitcher and let it cool. Serve the chilled lemonade in glasses.
