Rhubarb Gratin

Ingredients

  • 800 g rhubarb
  • 3 eggs
  • Salt
  • 250 g flour
  • 1 packet vanilla pudding powder (for 500 ml liquid)
  • 375 ml milk
  • 1 heaping tbsp sugar (optional more)
  • flour (for dusting)
  • butter (for the pan)
  • powdered sugar (for dusting)

Instructions

    Preheat the oven to 180°C (350°F) with top and bottom heat.

    Wash, trim, and cut the rhubarb into small pieces.

    Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. In a bowl, whisk together the yolks, flour, pudding powder, and milk; add sugar to taste and fold in the beaten egg whites. Lightly dust the rhubarb with flour, gently fold it into the batter, pour into a buttered baking dish, and bake in the preheated oven for about 30-40 minutes.

    Remove the finished gratin from the oven, let it cool slightly, then dust with powdered sugar before serving.
