Orange Chia Cream with Pistachios

The orange chia cream with pistachios from Spoonsparrow works as well for breakfast as a snack or dessert.

Ingredients

  • 300 ml Almond drink (Almond milk)
  • 300 ml coconut milk
  • 1 Organic Orange
  • 2 tbsp birch sugar (15 g; xylitol)
  • 6 tbsp chia seeds (5 g each, light and dark)
  • 100 g Yogurt (3.5% fat)
  • 2 tbsp pistachio kernels (15 g)

Instructions

    Boil almond drink and coconut milk for 1–2 minutes. While boiling, peel the orange hot, grate it dry, and rub off the zest. Squeeze out the juice and set aside to cool. Stir in orange zest, xylitol, and 5 tbsp chia seeds into the almond-coconut mix and let cool for 10 minutes. Then fold in yogurt and refrigerate overnight.

    The next day stir in orange juice and fill the cream into cups. Roughly chop pistachios and sprinkle the cream with them and the remaining chia seeds.
