Rhubarb Bread Casserole

Ingredients
- 500 g rhubarb
- 50 ml dry white wine
- 4 tbsp sugar
- butter (for the baking dish)
- 6 slices of white bread
- 200 ml whipping cream (at least 30% fat content)
- 4 eggs
- 1 vanilla bean (pulp)
- 1 tsp cinnamon
- powdered sugar (for dusting)
Instructions

Wash, trim and cut the rhubarb into 2 cm pieces. Add to boiling white wine with 2 tbsp sugar and simmer for about 4 minutes until firm; let cool slightly.

Grease a baking dish. Preheat the oven to 180°C fan.

Cube the bread and mix with the rhubarb. Fill the dish with this mixture.

Whisk the cream with the eggs, vanilla pulp, cinnamon and 2 tbsp sugar, then pour over the bread cubes. Bake in the preheated oven for about 20 minutes until golden brown. Dust with powdered sugar before serving.
