Ingredients
- 1 bunch spring onions
- 2 ripe tomatoes
- 3 tbsp dried tomatoes (packed in oil)
- 150 g ham (sliced)
- 1 Red Onion
- 2 tbsp olive oil
- 8 slices stale white bread
- 350 ml whipping cream
- 4 eggs
- 100 g freshly grated Parmesan
- 1 tsp fresh chopped thyme
- 1 tbsp fresh chopped parsley
- Salt
- Pepper (freshly ground)

Wash, trim and dry the spring onions, then cut into rings. Wash the tomatoes, quarter them, remove seeds and stems, and dice the flesh. Drain the dried tomatoes well and chop finely. Slice the ham into strips. Peel the red onion and slice it into thin strips.

Heat the olive oil in a pan and quickly sauté the ham strips, spring onions, dried tomatoes and onion slices. Remove from heat and let cool.
