Refreshing Yogurt Cream

Ingredients
- 4 sheets gelatin
- 0.5 untreated mandarin
- 0.5 untreated lemon
- 350 g yogurt
- 3 tbsp powdered sugar
- 20 ml lemon liqueur
- 1 Egg white
- 150 ml whipping cream

Soak the gelatin in cold water. Wash the mandarin and lemon hot, grate their zest, mix together and set aside. Squeeze juice from both halves of the fruit. Whisk the yogurt with the citrus juice and 2-3 tbsp powdered sugar until smooth. Warm the extracted gelatin with the liqueur and let it melt. Stir in 2-3 tbsp yogurt cream and fold into the remaining mixture. Beat the egg white with the rest of the powdered sugar until stiff peaks form. Whip the cream to stiff peaks as well and fold both into the base.

Distribute the cream among four glasses and cover, refrigerating for at least 2 hours.
