Red Wine Pears with Vanilla Cream and Pistachios

Ingredients

  • 3 pears
  • 250 ml dry red wine
  • 3 tbsp Marsala
  • 2 tbsp sugar
  • 1 cinnamon stick
  • 0.5 lemon
  • 4 thin slices fruit cake (or sponge)
  • 200 ml whipping cream
  • 1 packet vanilla sugar
  • 4 tbsp chopped pistachios

Instructions

    Heat red wine, Marsala, sugar, cinnamon and crushed lemon in a pot. Peel the pears, halve them, remove stems and cores, dice the flesh, add to the wine mixture and simmer covered for about 5 minutes. The pears should remain firm.

    In a second pot reduce the cream with vanilla sugar until it is roughly half its volume.

    Cut four circles from the fruit cake using a glass. Distribute the pears in red wine over four glasses. Place one slice of fruit cake on each, pour some cream over it and sprinkle pistachios before serving.
