Ingredients

  • 500 ml dry red wine
  • 100 ml Orange Juice
  • 1 piece untreated orange zest
  • 1 vanilla pod
  • 1 cinnamon stick
  • 2 cardamom pods
  • 150 g sugar
  • 4 ripe pears (e.g., Williams Christ)
  • 1 tsp Cornstarch

Instructions

    Bring the wine with the juice, orange zest, split vanilla pod, spices and sugar to a boil in a pot. Simmer for about 10 minutes over medium heat.

    Wash, peel and place the pears in the liquid. Poach lightly for about 8 minutes. Remove them and bring the liquid back to a boil while whisking in cornstarch mixed with cold water to thicken.

    Plate the pears, pour some of the sauce over them and garnish with candied orange zest if desired before serving.
